Some days we are too busy to cook a really elaborate meal. Whether we are in a zoom meeting, running around doing errands, driving the kids to sports practice, or just couldn’t find the time to spend in the kitchen, our family deserves a hearty and delicious meal.
Believe me when I say everyone will love this one. Your kitchen will smell heavenly and it will tastes like you spent a lot of time cooking. The chicken is so tender and flavorful, it is really a melt-in-your-mouth chicken.
INGREDIENTS FOR MELT IN YOUR MOUTH CHICKEN;
You won’t believe how few ingredients it takes to make and how fast you put it together. Best of all, no mountain of dirty dishes to wash because this is a one-pot meal!
- 4 boneless chicken breasts
- 1 cup mayonnaise (or Greek yogurt for a healthier option)
- 1 cup Parmesan Cheese (or sharp Cheddar or Asiago cheese) divided
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
INSTRUCTIONS FOR MAKING MELT IN YOUR MOUTH CHICKEN;
- Step 1. preheat oven to 375F.
- Step 2. Cut chicken breast in half. Flatten each piece with a meat pounder or rolling pin to ensure even cooking. Arrange your chicken pieces in one layer on your baking dish. (If the time permits, add ¾ cup of buttermilk to the chicken and marinate 30 mins to overnight).
- Step 3. In a small bowl, mix the mayonnaise, ½ cup of Parmesan cheese, salt, pepper, and garlic powder. Top each piece of chicken with the mixture and spread evenly.
- Step 4. Sprinkle the ½ cup Parmesan cheese remaining evenly on top.
- Step 5. Bake for 45 mins or until cheese is bubbly and golden brown.
WHAT TO SERVE WITH MELT IN YOUR MOUTH CHICKEN?
This chicken pairs perfectly with rice or Sweet Potato Fries! and steamed veggies or Amish Broccoli Salad. If you are counting carbs, just add veggies.
PREPARATION TIPS TO MAKE MELT IN YOUR MOUTH CHICKEN;
- If you don’t have buttermilk, you can make it yourself by mixing 1 cup of milk with 1 tablespoon of white vinegar. Let this mixture stand for 5 minutes and use as directed.
- You can make this recipe Italian by adding ¼ cup of chopped sundried tomatoes to the mixture.
- f you want a Mexican version, add a teaspoon of taco seasoning to the mixture
- If you just want to spicy things up, add a few dashes of Tabasco sauce to the mixture.

How about using a casserole crockpot? I have one and was thinking about it. The chicken was SO delicious! Such a simple recipe to be so good! Wonderfully tender and with such a good taste. Have you done this?

I would say Instapot yes, air fryer no. It has too much liquid por an air fryer
