MARRY ME CHICKEN
For me, the main ingredient that gives an amazing and unique taste to these chicken breasts is sun-dried tomatoes. Firstly, they are very tasty, and secondly, they are very beautiful.
But their main advantage is their piquancy and oiliness. Chopped sun-dried tomatoes taste really good with heavy cream and chicken broth.
Oh yes, they make chicken breasts so juicy. I think I’ll cook more than one dish with this sauce. I really like it.
When I first cooked ‘marry me’ chicken for my close friends, they thought I spent a lot of time in the kitchen preparing this dish. It doesn’t taste like a homemade dish cooked in half an hour.
These chicken breasts are so extraordinary and tasty like the chef’s dish. Marry Me Chicken is exactly the dish that should be prepared for a romantic evening with wine and candles.

HOW TO MAKE MARRY ME CHICKEN?
- First, heat olive oil in a large oven-safe skillet. Season the chicken breasts with salt and pepper on each side. Transfer them to a skillet. Sear for 5 minutes on each side until golden.
- Transfer the chicken breasts to a plate when golden on each side. Don’t turn off the heat.
- Add minced garlic to a skillet. Cook for 1 minute.
- Add thyme, red pepper flakes, chicken broth, and heavy cream. Cook for 5 minutes, stirring constantly. The sauce should become thicker.
- Add chopped sun-dried tomatoes and grated parmesan cheese, stir. Turn off the heat.
- Return the chicken breasts to the skillet. Spoon the sauce over the chicken.
- Bake in the preheated oven for 15 minutes or until completely cooked. Sprinkle with grated parmesan and fresh basil. Serve warm.
WHAT TO SERVE WITH CHICKEN?
I like to serve this chicken with rigatoni pasta, mexican Rice, or mexican Potatoes, and vegetables with crispy bread. Honestly, it seems to me that this is exactly the dish that can be served with anything.

- You don’t need to cook the chicken breasts completely in a skillet, just sear it on each side until golden. We will bake the chicken breasts in the oven with the sauce until cooked.

- ¾ cup chicken broth;
- ½ cup heavy cream;
- ½ cup sun-dried tomatoes, chopped;
- ½ cup parmesan cheese, grated
- basil leaves.
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a large oven-safe skillet. Place chicken breasts in the skillet. Season with salt and pepper. Cook 5 minutes per side until golden. Then, transfer the chicken breasts to a plate.

I made this tonight. Just for me. I had 2 chicken breasts already cut into chunks so I used those. I added more broth, which was low sodium because it seemed to be getting too thick. I only had Half and half and that is what I used. I did everything else exactly as written and it was really tasty. It was easy, I had all the ingredients and tasted great! Win – win.
Made this tonight and it was delicious. Sautéed onions in the pan before adding garlic, doubled the liquid and because of a dairy allergy substituted the cream with oat milk and the Parmesan cheese with Earth Islands Parmesan alternative. I then used a cornstarch slurry to thicken the sauce. The family loved it. We will definitely make again.

Love this recipe! Had to make a few substitutions:
Made it with bone in chicken breasts (so took a little longer in the oven.)
Didn’t have sun dried tomatoes so substituted with Rotel tomatoes
Didn’t have cream so substituted with coconut milk.

A great recipe! Only thing I would change is I would remove the oil from the tomatoes before using. I used fresh basil and it bc was wonderful; I served it over brown rice with a side of broccoli and carrots. A very colorful meal and so yummy!

This chicken dish was amazing! Absolutely delicious! I did add a little onion along with the garlic. I used skinless, boneless breasts. They were so juicy. The only mistake I made was to use sun dried tomatoes jarred in oil. The next time I make this I will buy the dried ones that’s aren’t in oil. It did make the sauce a little oily so I skimmed some off the top.
I doubled the sauce because I made it with brown rice and it’s so yummy pouring some of that sauce on. I also used half and half and the sauce still thickened up nicely. Thanks for such a great recipe.

Great recipe, very easy to modify w on hand ingredients. I added a chopped red bell pepper and mushrooms. I used Half n half and added a pat of butter. I keep cooked spaghetti squash in small batches in the freezer. Added those in as a ‘pasta’ and my hubs said yes after 32 years he’d still *marry me* so thanks for the yummm.

Can you transfer it to a glass 9×13 dish and bake it like that? I have a large family and would have to double the recipe. This recipe looks & sounds delicious!
Not sure if this helps but I had some family over so I had to double the recipe. I used two separate cast iron skillets and I placed both in the oven. I separated the two racks in the oven just enough so that I could slide in one skillet and then the other on the top rack. It turned out awesome.

We added spinach and garlic. I’d do mushrooms too if I had them on hand. Poured sauce over both chicken and angel hair pasta. Yummm!

Excellent! I added an extra 1/4!c each of the heavy whipping cream and the chicken broth. I also seasoned the chicken with a mixture of equal parts garlic powder, onion powder, chili powder, pepper and twice the salt to the other spices. We served over angel hair pasta with shaved Parmesan and julienned basil. Everyone loved it. Thanks for recipe!
