This is a super easy and delicious chicken and spinach recipe. I really like this one-pan chicken and spinach for its creamy spinach sauce, yummy mushrooms, amazing chicken thigh slices, and delicious flavor.
Usually, I prepare this chicken and spinach recipe for dinner and serve it with rice or pasta. My family always enjoys it.
HOW TO MAKE CHICKEN AND SPINACH IN CREAMY MUSHROOM SAUCE
- Step 1. Heat 2 tbsp olive oil in a large skillet. Then, add 4 sliced chicken thighs. Cook for a few minutes on each side until nicely browned. Then, season with salt and pepper to taste.
- Step 2. Remove browned chicken thighs slices from a skillet. Set aside, but don’t turn off the heat. Add 10 oz sliced mushrooms to a hot skillet. Cook for a few minutes until lightly browned. Season with salt and pepper to taste. Stir to combine. Then, remove from a skillet.
- Step 3. Prepare the creamy sauce. Melt 4 tbsp butter in the same skillet. Then, add 4 minced garlic cloves and cook for 1 minute until fragrant. Add 1 tbsp all-purpose flour and stir until combined. Then, add 1 cup half and half, ½ cup chicken broth, and ½ cup grated parmesan cheese to a skillet. Stir to combine. Season with salt and pepper to taste. Stir.
- Step 4. Add 1 cup fresh spinach to a skillet. Cook until wilted.
- Step 5. Return browned chicken thighs slices and sliced mushrooms to a skillet. Mix to combine. Cook until warmed. Enjoy!
BAKING TIPS FOR CHICKEN AND SPINACH
- Use chicken breasts instead of chicken thighs.
- You can also add crushed red pepper flakes to the creamy sauce.
- You can also use frozen spinach if you don’t have the fresh one.
WHAT KIND OF CHICKEN TO USE FOR CHICKEN AND SPINACH?
For me, it will be tastier to use skinless and boneless chicken thighs for this chicken and spinach recipe, because chicken thighs are more tender, moist, and flavorful. Anyway, you can also use skinless and boneless chicken breasts.
