I usually serve this with egg noodles and I love the way the creamy sauce clings to them.
The addition of white wine and mustard in the sauce makes the whole dish come together with a wonderful depth of flavor.

HOW TO MAKE BEEF STROGANOFF FROM SCRATCH?
- Remove the excess fat from the roast and slice into ½-inch thick by 2 inches long strips. Add salt and pepper.
- In a large skillet, cook the beef until no longer pink. Add the green onions and cook for 3-5 minutes.
- Put the beef and onion mixture to the side of the skillet, and whisk the flour into the meat juices.
- Pour in the beef broth and mix it in thoroughly. Bring to a boil, stirring constantly.
- Reduce the heat and add the mustard. Let it simmer, covered, for one hour
- Mix in the mushrooms, sour cream, and white wine. Simmer for 5 more minutes and serve.
WHAT IS THE BEST MEAT FOR BEEF STROGANOFF?
If you are looking for an affordable cut of beef to make stroganoff, chuck roast is a great alternative, but it does need a bit of cooking time to tenderize.
If cost is of no concern, Beef Tenderloin and Filet Mignon tips are the best and most tender cuts of beef you can use. They don’t need much cooking time at all. Boneless Ribeye and Top Sirloin are good choices too.
WHAT TO SERVE WITH BEEF STROGANOFF?
My family enjoys eating it over egg noodles. We just love the way the sauce clings to the noodles. It is so good. I always include a side salad like; Olive pasta salad, tossed salad, or Caesar salad when serving a high-fat entree, I think the acidity of the dressing helps balance out the fat content. If you don’t like egg noodles, mashed potatoes, white rice, and garlic bread are great side dishes.
CAN YOU FREEZE BEEF STROGANOFF?
Yes, you can. Let it cool completely before storing it in freezer bags and freeze it for up to three months.
Remember always to label the bag with the date that you made it, so you don’t keep it frozen beyond the suggested time.
