I am a confessed meat lover. I love all meat. But I know it can be intimidating having a piece of meat in your hands and thinking I hope I can make it taste good, cook it properly and be tender. That’s why I love flank steak. It’s a thin cut of meat so you can control its doneness easier than thick cuts. So let’s concentrate on taste.

GRILLED FLANK STEAK

With this flank steak marinade recipe with lime, you can be sure it will be tasty, and lime juice breaks up the protein in meat a bit, so it will also help with tenderizing it.

All you need to make this great marinade is extra virgin olive oil, soy sauce, lime juice, and brown sugar.

These staple ingredients found in almost all pantries. That’s how easy this recipe is. Your grilled flank steak will get a perfect score from your family. I love to serve this simple grilled steak with Rice pilaf, shrimp pasta salad, tossed salad or creamy caesar salad dressing!

FLANK STEAK INGREDIENTS:

  • Olive oil: I use light olive oil. Extra virgin should be reserved for salad dressings or when eating it raw. Heat can degrade the phenols and polyphenols present in extra virgin olive oil, taking away all the healthy benefits of consuming it.
  • Reduced sodium soy sauce: just because it’s definitely better for you. This will add most of the salt, but you still have to add a little, just be careful not to add too much.
  • Lime juice: the acidity balances perfectly the saltiness of the soy sauce and the sweetness of brown sugar, contributing to the perfect umami flavor.
  • Packed brown sugar: again, works perfectly with all the other flavors here. You can use white if you don’t have brown sugar, but I prefer brown.
  • Flank steak: look for the one that is more even in thickness throughout. This will definitely contribute to even cooking. Remember to always clean your cut and get rid of extra fat or membranes you don’t want. If you’re ok with a bit of fat, just leave it as is. It is a lean cut of meat anyway.

HOW TO CUT FLANK STEAK?

You should always cut flank steak diagonally against the grain of the meat, this way you cut through the tough fibers which shorten them and makes it more tender and easier to chew. Also, cut it into thin slices.

HOW TO GRILL A FLANK STEAK?

  1. Mix all ingredients for the marinade in a large bowl: olive oil, soy sauce, lime juice, and sugar
  2. Put your flank steak into the bowl and get it completely covered in the marinade. Refrigerate it for 30 mins to 2 hours, covered
  3. Pat dry the marinated flank steak with paper towels and add salt and pepper to both sides. Remember not to add too much.
  4. Heat up your outdoor grill or griddle until hot, and cook the flank steak for 6 minutes on each side or until the internal temperature reads 130-135 for medium-rare or 145 for medium.

HOW TO COOK FLANK STEAK IN THE OVEN?

Turn your oven to broil. Place the flank steak on a baking sheet and broil for 4-6 mins on each side.
