I am more than sure there are many variations on the chocolate chip cookies theme. And you’ve probably tried a few already. How does this recipe seduce me? It has a few twists that make it truly delicious, soft, and chewy.

Soft and Chewy Oatmeal Chocolate Chip Cookies

First, it is honey. There is very little of it, but good honey gives a great flavor. If it happens that you do not consume honey, easily replace it with any herbal syrup.

The second twist is nuts! Feel free to experiment with walnuts, pecans, or even almonds.
And of course oatmeal. This is the case when I showed my daughter that oatmeal can be delicious and now she loves it in any form.

The ingredient you’ll need to make Soft and Chewy Oatmeal Chocolate

  • 1 and 1/3 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 to 1 teaspoon cinnamon, to taste
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted and cooled to room temperature
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon honey
  • 1 tbsp vanilla
  • 2 and 1/4 cups old-fashioned oats
  • 1 and 1/4 cup chocolate chips, your favorite kind
  • 1 large egg
  • 1/2 cup chopped walnuts, optional but recommended

How to make chewy oatmeal chocolate chip cookies?

  • Step 1. In a large bowl, sift all the flour, add the cinnamon, salt, and baking soda. Mix.

  • Step 2. In a separate bowl, beat the melted butter and sugar using an electric mixer.

  • Step 3. Add honey, vanilla, and egg to the butter mixture, mix again.

  • Step 4. Add flour to the butter mixture and beat, starting at low speed.

  • Step 5. Add oats, mix.

  • Step 6. Add 1 cup chocolate chips and chopped walnuts, then stir.

  • Step 7. Form balls and flatten them a little. Place the dough balls on a flat bowl or cutting board. Cover with cling film and refrigerate for at least 2 hours.

  • Step 8. Preheat oven to 350F, line baking sheet with parchment. Place cookies at least 2 inches apart. Bake for 12-14 minutes.

  • Step 9. Remove cookies from the oven, sprinkle with chocolate chips. Cool on a wire rack.

How to make soft oatmeal chocolate chip cookies?

In order for the cookies to be soft, observe the temperature setting of your oven and the baking time. If the temperature is too high or the cookies are baked for too long, they will be dry and hard.

I will share with you a lifehack of an even softer cookie. Instead of one egg, add 2 yolks, completely eliminating the egg white. The yolks contain fat that keeps the cookies moist, soft, and chewy.

How long to bake oatmeal chocolate chip oatmeal cookies?

The baking times of this cookie range from 12 to 14 minutes at 350F. First, you will see how the cookies are spreading over the baking sheet, increasing their diameter at least twice.

The cookie then forms a bulging cap, which rises slightly. Once that cap is down, your cookie is ready. You can get it out of the oven. Do not shift it right away so that it does not break, let it cool slightly.

Can I use quick oats in oatmeal cookies?

I am a stickler for the old-fashioned oatmeal in this recipe. Nonetheless, quick oats can be found too! Keep in mind one thing, quick oats should be taken 2 cups instead of 2¼. Quick oats behave like flour, they absorb more liquid and the cookies can be drier.

Recipe tips;

  1. You can substitute almonds or pecans for walnuts.
  2. Be sure to use thermostable chocolate. Regular chocolate does not hold its shape, it will spread over the entire baking sheet and the cookies will lose their appearance.
  3. You can substitute any herbal syrup for honey. This can be maple syrup, date syrup, agave syrup, or Jerusalem artichoke syrup.

Instructions

  • Combine flour, salt, cinnamon, and baking soda.
  • Whisk together the melted butter and sugar. Then add honey, egg, vanilla there, and beat again.
  • Combine flour with butter mixture and whisk. Then add the oats, a cup of chocolate chips, and the chopped walnuts, in turn, stirring after each ingredient is added.
  • Shape into balls, flatten slightly, place on a flat surface, and refrigerate for 2 hours.
  • Preheat oven to350F, place cookies on parchment-lined baking sheet 2 inches apart. Bake for12-14 minutes. Sprinkle with the remaining chocolate, cool, and serve.

Notes

  • Use butter, not margarine. Butter gives a good flavor and whips better.

  • Use a kitchen scale or measuring cups to ensure that you are not mistaken with the number of ingredients.

  • Do not ignore the point with cooling the dough. Cooling in the refrigerator should take at least two hours.

  • Place the cookie sheet in the preheated oven.
