In my experience, if you want to serve your family a great egg dish, an Amish egg casserole is the best way to do it. Of all the ones I’ve tried, this is the best breakfast casserole recipe I’ve baked. It is fast, easy, and very cheesy.

Your whole family will enjoy breakfast and you will not be slaving over a stove making eggs for each and every person.

You can bake the one large breakfast casserole with bacon and hash browns and can have a seat and eat all together.

Sometimes the cook is left in the kitchen while everybody else is already eating. Not this time. You just let the oven do the cooking and you can relax and share with your loved ones.

INGREDIENTS FOR CHEESY AMISH BREAKFAST CASSEROLE

  • 1 lb sliced bacon, diced
  • 1 sweet onion, chopped
  • 4 cups frozen hash brown potatoes, thawed
  • 9 eggs, lightly beaten
  • 2 cups shredded Cheddar cheese
  • 1 ½ cups cottage cheese
  • 1 ¼ cups shredded Swiss cheese

HOW TO MAKE CHEESY AMISH BREAKFAST CASSEROLE

  • Step 1. Preheat the oven to 350F. In a medium-sized skillet, cook the onion and bacon until the bacon is browned and fully cooked. Drain.

  • Step 2. Grease a 9×13” casserole dish. Using a medium-sized bowl, mix eggs, cheddar cheese, Swiss cheese, cottage cheese, potatoes, and bacon-onion mixture.

CAN YOU MAKE AMISH BREAKFAST CASSEROLE THE NIGHT BEFORE?

Yes, you definitely can. Pour mixed ingredients into the prepared casserole dish, cover with plastic wrap and refrigerate for up to 10 hrs.

Do not keep the unbaked casserole for more than 10 hrs in the refrigerator.

The next morning, preheat the oven to 350F and cook the casserole for 50 mins.

CAN YOU FREEZE AMISH BREAKFAST CASSEROLE?

Yes, you can. Bake the casserole through, wait for it to cool completely, and cover with plastic wrap. Freeze for up to a month and when ready to serve, thaw the casserole and bake in a preheated 350F oven for 10 mins or until heated through.

HOW TO REHEAT BREAKFAST CASSEROLE?

You can reheat the casserole in a preheated 350F oven for 15 minutes until warm, or you can microwave the whole casserole for 5 minutes.

If you have leftovers, microwave portions for 2 minutes until warm.

WHAT TO SERVE WITH CHEESY AMISH BREAKFAST CASSEROLE?

I like to serve warm bread rolls and fruit salad to make this a complete meal.

RECIPE TIPS

  1. I like to buy the Cheddar and Swiss cheeses in blocks and shred it myself. This way you eliminate the additives used in pre-shredded cheese added to prevent it from sticking.
  2. Buy turkey bacon if you want a lower fat version of this dish
  3. Reduced-fat cheeses also reduce calories in this dish
  4. You can add chopped green bell peppers or jalapeno peppers for another pop of color.
