EGG CASSEROLE (EGG BAKE)

Breakfast is my favorite meal. After a good night’s sleep, I wake up hungry. There is nothing I love more than waking up early on a Saturday morning and making a special breakfast for my family.

EGG CASSEROLE (EGG BAKE)

This egg casserole recipe is one of my favorite things to make. It is easy and so good! It’s one of those recipes people think you slaved over, but it really takes very little time to make.

It is foolproof and you can make some of it the night before, so you can sleep a few more minutes.

Your family will wake up to the delicious smell of smoky bacon, cheese, and egg. The sauteed veggies give this egg casserole recipe what it needs to be a complete and healthy meal.

HOW TO MAKE EGG CASSEROLE FROM SCRATCH

  • Step 1. preheat oven to 350F
  • Step 2. Grease a 9×13 baking dish
  • Step 3. Sautee diced bacon until just starting to brown

  • Step 4. Add chopped onion and saute until onions are transparent

  • Step 5. Add chopped garlic, red and green bell peppers and sautee for 5 more minutes. Remove from heat, and let cool.

  • Step 6. On a separate bowl, whisk eggs and add salt and pepper
  • Step 7. Add shredded cheese to eggs and stir to combine

  • Step 8. Add bacon and veggies to the egg mixture. Mix until well combined

  • Step 9. Transfer mixture to the greased baking dish

  • Step 10. Bake in preheated oven for 25-30 or until an inserted toothpick comes out clean, and the top is slightly brown

HOW DO YOU KEEP EGG CASSEROLE FROM FALLING

Before serving your egg casserole, let it stand for 5 minutes to allow it to set before cutting into it. Do not open the oven door until 25 mins have passed.

HOW DO YOU KNOW WHEN EGG CASSEROLE IS DONE

The best way to know when your egg casserole recipe is done in inserting a toothpick in the middle. If it comes out clean, it is perfectly done. Also, the center should be totally set.

CAN YOU FREEZE EGG CASSEROLE AFTER COOKING?

You can freeze your egg casserole recipe, just allow it to cool down completely before storing it in an airtight container. Freeze for up to 2 months. Do not freeze if still hot.

HOW TO REHEAT EGG CASSEROLE

Remove from the freezer, and microwave your egg casserole until heated through between 2-3 minutes.

Ingredients

  • 12 eggs, beaten
  • 5 slices of bacon, dices
  • 1 cup onion, finely chopped
  • 1 tsp minced garlic
  • 1 medium red bell pepper diced (about 1 cup)
  • ¼ tsp pepper
  • 1 medium green bell pepper diced (about 1 cup)
  • 1 cup shredded cheddar cheese
  • ½ tsp salt
