EGG CASSEROLE (EGG BAKE)

This egg casserole recipe is one of my favorite things to make. It is easy and so good! It’s one of those recipes people think you slaved over, but it really takes very little time to make.

Ingredients

  • 12 eggs, beaten
  • 5 slices of bacon, dices
  • 1 cup onion, finely chopped
  • 1 tsp minced garlic
  • 1 medium red bell pepper diced (about 1 cup)
  • ¼ tsp pepper
  • 1 medium green bell pepper diced (about 1 cup)
  • 1 cup shredded cheddar cheese
  • ½ tsp salt

Instructions

  • Preheat oven to 350F,
  • Grease a 9x13 baking dish,
  • Sautee diced bacon until just starting to brown
  • Add chopped onion and saute until onions are transparent
  • Add chopped garlic, red and green bell peppers and sautee for 5 more minutes. Remove from heat, and let cool.
  • On a separate bowl, whisk eggs and add salt and pepper
  • Add shredded cheese to eggs and stir to combine
  • Add bacon and veggies to egg mixture. Mix until well combined
  • Transfer mixture to the greased baking dish
  • Bake in preheated oven for 25-30 or until an inserted toothpick comes out clean, and the top is slightly brown
