Ingredients
1 lb sliced bacon, diced
1 sweet onion, chopped
4 cups frozen hash brown potatoes, thawed
9 eggs, lightly beaten
2 cups shredded Cheddar cheese
1 ½ cups cottage cheese
1 ¼ cups shredded Swiss cheese
Instructions
Preheat the oven to 350F. In a medium-sized skillet, cook the onion and bacon until the bacon is browned and fully cooked. Drain.
Grease a 9x13” casserole dish. Using a medium-sized bowl, mix eggs, cheddar cheese, Swiss cheese, cottage cheese, potatoes, and bacon-onion mixture.
Transfer mixture to the prepared casserole dish
Bake casserole for 45-50 mins until eggs are cooked through.
