- 1 sweet onion, chopped
- 4 cups frozen hash brown potatoes, thawed

- 1 ½ cups cottage cheese
- 1 ¼ cups shredded Swiss cheese

- Step 1. Preheat the oven to 350F. In a medium-sized skillet, cook the onion and bacon until the bacon is browned and fully cooked. Drain.

Yes, you can. Bake the casserole through, wait for it to cool completely, and cover with plastic wrap. Freeze for up to a month and when ready to serve, thaw the casserole and bake in a preheated 350F oven for 10 mins or until heated through.

You can reheat the casserole in a preheated 350F oven for 15 minutes until warm, or you can microwave the whole casserole for 5 minutes.
If you have leftovers, microwave portions for 2 minutes until warm.

- I like to buy the Cheddar and Swiss cheeses in blocks and shred it myself. This way you eliminate the additives used in pre-shredded cheese added to prevent it from sticking.
- Buy turkey bacon if you want a lower fat version of this dish
