Side dishes are so often neglected and we are always stuck as to what to serve with our main dish. We all know that a balanced diet calls for more veggies on the plate than any other food group, so please do not think of them as something secondary.
This easy zucchini casserole takes care of that for you in the most delicious way. With just a few ingredients like onion, garlic, butter, bread, egg, cheese, and zucchini, you can bake a delicious casserole even your most picky eater will enjoy.
The bread bakes crispy, the zucchini is tender but not mushy and it is so cheesy, you will never stop to think you’re eating your daily quota of veggies!
INGREDIENTS FOR EASY ZUCCHINI CASSEROLE;
- Bread: use the sliced bread of your choice for this dish. One that you really enjoy. As the casserole bakes, the bread toasts a little so it will not be soggy at all.
- Butter: use the butter you have on hand, salted or unsalted. You will be adding salt to your casserole, so it really doesn’t matter. Please do not substitute for margarine.
- Zucchini: pick a firm and fresh zucchini for the best results. You don’t have to peel it or remove its seeds. Just cut it into small cubes.
- Onion: I like to use sweet yellow onions for this dish. The flavor of zucchini is very mild and we don’t want the onion to be overpowering.
- Garlic Salt: this ingredient has two functions, it infuses de casserole with garlic flavor and adds salt to the dish. You can use fresh garlic too, but then add salt to the casserole.
- Egg: the egg acts like the bonding agent for all the other ingredients. It makes the casserole come together and not fall apart when serving.
- Cheddar Cheese: you can choose to use sharp cheddar or mild. You can use any other cheese you like best. Cheese just makes it extra yummy.
HOW TO MAKE ZUCCHINI CASSEROLE?
- Preheat the oven to 350F. Using a medium-size bowl, mix together the bread cubes with the melted butter.
- Mix in the zucchini, chopped onion, and garlic salt.
- Add the beaten egg and mix it in with all the other ingredients.
- Place the zucchini mixture in a greased casserole dish
- Top with the shredded Cheddar cheese and cover with aluminum foil. Bake for 30 mins covered, then remove the foil and bake for another 30 mins.
WHAT TO SERVE WITH CHEESY ZUCCHINI CASSEROLE?
You can have this delicious casserole as a main dish and serve it with a shrimp pasta salad, or serve it as a side dish for your favorite protein. Garlic chicken breasts, meatloaf, a roast, steak, or anything you have planned as a main dish.
TIPS FOR THE BEST ZUCCHINI CASSEROLE RECIPE;
- Cut your zucchini in small dice. Too big of dice will not bond with the other ingredients.
- Shred the cheese yourself. Do not buy pre-shredded cheese. It has added anti-caking ingredients to prevent it from sticking.
- If you want to add a little color or heat, add chopped red bell pepper or chopped jalapenos.
- Make sure to beat the egg before adding it to the rest of the ingredients for it to blend perfectly.
