This delicious chicken rice and broccoli one-pan recipe will have your taste buds going crazy! My mouth is watering just looking at it!
Ever wonder what to cook for dinner? It can be draining cooking something new each week hey. Well, this will have all your prayers answered simply throw everything into one pot, and voila! What’s even better is you can scoop up the leftovers and freeze so dinner is sorted for the next day too!
The Ingredients:
- 3 tbsp extra virgin olive oil
- 1/2 medium yellow onion
- 1 pound boneless skinless chicken breasts
- 1 tsp kosher salt
- 1 tsp freshly ground pepper
- 1 cup uncooked extra long-grain white rice
- 2 1/2 cups broccoli florets (bite-sized pieces)
- 2 1/2 low sodium chicken broth
- 2 cups shredded extra-sharp cheddar cheese
HOW TO MAKE ONE-PAN CHEESY CHICKEN, BROCCOLI, AND RICE
- Step 1. In a skillet heat up the olive oil, sauté the onions then cook the chicken. Season with salt and pepper.
- Step 2. Next, toast the rice lightly in some olive oil.
- Step 3. Add in the chicken broth.
- Step 4. Once the rice is almost cooked add in the broccoli to steam cook.
- Step 5. When all the liquid has been absorbed, stir in 1/2 a cup of the cheese and sprinkle the rest over the top.
What sauce to have with chicken rice and broccoli?
A lovely garlic sauce would really compliment this dish or some rich gravy you could turn it into your own version of a roast dinner.
Mayonnaise is also a great compliment and an all-rounder I’m sure that something lurking in your kitchen cupboards.

- You can use rotisserie chicken for this recipe if you prefer. Simply this with your cheese at the end as it won’t need cooking time like the rest of the ingredients.
- Add in fresh or dried parsley to this dish it will add some amazing flavor along with the chicken broth.
- If you don’t have regular broccoli you can use tender stem just cut the stems off.

Ingredients
- 3 tbsp extra virgin olive oil

Instructions
- On the stovetop heat 2 tbsp the olive oil and sauté the onions until translucent.
- Season the chicken with salt and pepper.
- Add the chicken to the skillet and cook.
- Toast the rice in the remainder of olive oil.
- Pour in the chicken broth and stir gently.
- When the rice is 80-90% cooked add in the broccoli to steam cook.
- Check all the chicken broth has been absorbed.
- Now stir in 1/2 cup of cheese. Sprinkle 1 cup of cheese over the top. Enjoy!
