Sometimes you don’t have the time to whip up a homemade cake or a batch of cookies from scratch, but you want to make a treat that will impress. That’s where these easy cake mix bars come in!
Cake Mix Bars
This is one of my favorite bar recipes using yellow cake mix because it is ready in just over 30 minutes, and everything is made in one bowl.
The bars are soft, chewy, and full of chocolate chips, just like your favorite cookie. Their texture is in between a slice of cake and a cookie, the best of both worlds.

Cake Mix Bars Ingredients
- 1 box yellow cake mix (any brand) – I used Betty Crocker cake mix, but any brand will work. Using cake mix in this recipe is a great time saver because it has so many ingredients in it already, like sugar, baking powder, and baking soda.
- 1 large egg – The egg will be your binder and give your bars structure.
- ½ cup milk – I used 2% milk, but any milk or non-dairy milk will work fine.
- 1/3 cup vegetable oil or canola – Oil provides richness but is lighter than butter, so your bars will be fluffy rather than dense.
- 1 cup chocolate chips – Feel free to add chocolate, depending on your preference.
How To Make Cake Mix Bars?
- Preheat your oven to 350 degrees F. Spray a 15×10 baking pan with non-stick cooking spray and line it with parchment paper. Set aside.
- Add the cake mix, egg, milk, and oil to a large bowl and mix until just combined. Stir in chocolate chips until combined.
- Use a spatula to spread the batter into the prepared pan and smooth the top to create a flat layer.
- Bake in preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Remove the pan from the oven, and allow the bars to cool in the pan completely.
Can I Freeze Cake Mix Bars?
These cake mix bars freeze well. You can either freeze the entire tray by covering it in plastic wrap and placing it into a sealed freezer bag or cut it into individual bars and freeze it in separate sealed containers. Either way, make sure to thaw them before eating.

Recipe tips
- Cake mix bars work best if your eggs and milk are at room temperature. Allow them to sit out for at least 1 hour before using this recipe. This helps all your ingredients to mix evenly.
- Try not to overmix your batter. After step 2, there should still be a few streaks of flour. The entire mixture will come together fully after you mix in the chocolate chips.
- I like to sprinkle a few extra chocolate chips on the top before putting the bars in the oven to make them extra appealing. The chocolate will melt on top, making them even more irresistible.
Storing Leftovers
Leftover cake mix bars can be stored in airtight containers in the fridge for up to 4 days or frozen for up to 3 months. Allow bars to return to room temperature before eating if frozen.
