These no-bake cookies with oats and peanut butter come together fast, and the best part is you don’t even need to turn your oven on!

Butter, cocoa powder, milk and sugar come together on the stovetop and oats and peanut butter are folded in.

Leave them to cool, and there you have it, an instant hit!

So, give your oven a break and spend more time doing the things you enjoy, while remaining confident that your batch of cookies will turn out delicious.

WHY ARE THEY CALLED PREACHER COOKIES?

These no-bake cookies with oats and peanut butter were given their name because they are so fast to make and use ingredients that you already have around the kitchen.

It is said that if a housewife looked out her window and saw a preacher coming her way, she could quickly whip up these cookies and they would be cooling by the time he arrived.

You might not be waiting for a preacher to arrive anymore, but either way, these cookies are quick!

WHAT DO I NEED TO MAKE PREACHER COOKIES?

  • Butter – I recommend using unsalted butter in this recipe so you can control the amount of salt that goes in. Butter provides flavour and richness and allows these cookies to firm up as they cool.
  • Unsweetened cocoa powder – use unsweetened, natural cocoa powder so that these cookies do not end up too sweet.
  • Granulated sugar – you can use brown sugar or coconut sugar in place of granulated sugar if you wish.
  • Milk – milk provides most of the moisture in this recipe and softens the oats once they are mixed in.
  • Salt – I use just a pinch of salt in the mixture, then more on top later
  • Quick-cooking oats – oats make up the bulk of this cookie. I recommend using quick-cooking oats but see below for other options.
  • Crunchy peanut butter – I like using crunchy peanut butter because it adds some extra texture, but smooth will work fine.
  • Vanilla extract – vanilla adds an extra layer of flavour.
  • Flaky sea salt for finishing – extra salt helps to bring out the chocolate flavour. Feel free to leave this out.

HOW TO MAKE PREACHER COOKIES?

  1. In a medium saucepan over medium heat, combine the butter, cocoa, sugar, milk and salt together. Bring mixture to a boil and boil for 1 minute, stirring occasionally.
  2. Remove mixture from heat and stir in oatmeal, peanut butter and vanilla until combined. The mixture will begin to thicken.

  3. Using a small ice cream scoop, drop 1-2 tbsp of mixture onto a parchment or wax paper-lined baking sheet. Flatten cookies slightly.
  4. Sprinkle each cookie with a touch of sea salt and allow to cool and harden completely (about 1 hour)

TIPS FOR MAKING THE BEST PREACHER COOKIES:

  1. I like to use an ice cream scoop to drop the cookie mixture onto the lined baking sheet. This helps make each cookie the same size and keeps your fingers clean!
  2. Feel free to substitute any non-dairy milk or nut-free butter in this recipe to fit your taste preferences and/or dietary needs.
  3. A little sprinkle of flaky sea salt at the end helps to really bring out the chocolate flavour in these cookies and helps to balance out some of the sweetness.

HOW TO STORE PREACHER COOKIES?

These cookies can be stored in a sealed airtight container or plastic storage bag on the counter for up to 4-days. They can also be stored in the fridge. See above for information on freezing preacher cookies.

Answering Your Burning Questions:

CAN YOU FREEZE PREACHER COOKIES?

Yes, you can! Allow the cookies to cool completely then place them in a sealed plastic freezer bag and freeze for up to 3-months. Allow the cookies to thaw prior to serving.

CAN I USE OLD-FASHIONED OATS INSTEAD OF QUICK OATS?

Old-fashioned oats will work fine in this recipe. The flakes of old-fashioned oats are larger than quick oats so you will see more of their shape in the recipe, and they will provide more texture, but the flavour will be the same.

WHY DO MY NO-BAKE COOKIES TURN OUT GOOEY?

This is one of the most common mishaps in no-bake cookies, they turn out gooey.

The main reason this happens is that the mixture is not boiled for long enough or is not brought up to a high enough temperature on the stove.

Make sure that your mixture comes to a complete boil, then start a timer for 1 full minute.

Although these cookies are no-bake, this cooking step is important.

CAN YOU PUT NO BAKED COOKIES IN THE FRIDGE TO HARDEN?

These cookies will firm up enough at room temperature, but if you find your cookies aren’t firming up after about 30-minutes you can place them in the fridge to set.
