WHAT IS MUD CAKE MADE OF?
This easy Mississippi mud cake has three layers.
- Chocolate cake layer, you will need the following ingredients – all-purpose flour, white sugar, brown sugar, unsweetened cocoa powder, baking powder, baking soda, salt, vegetable oil, large eggs, whole milk, sour cream, vanilla extract, and boiling water.
- Marshmallow layer, you will need only 1 package (10 oz) mini marshmallow.
- For the chocolate topping layer, you will need these simple ingredients – unsalted butter, whole milk, unsweetened cocoa powder, vanilla extract, and powdered sugar.
HOW TO MAKE A MISSISSIPPI MUD CAKE?
- Preheat the oven to 350F. Mix together all of the dry ingredients (2 cups all-purpose flour, 1 cup sugar, 1 cup brown sugar, ¾ cup unsweetened cocoa powder, 2 tsp baking powder, 1 tsp baking soda, and ½ tsp salt) in a large mixing bowl using a whisk.
- Add ¾ cup vegetable oil, 2 large eggs, ⅓ cup whole milk, ⅓ cup sour cream, and 1 tsp vanilla extract to the dry ingredients. Mix together using an electric mixer at low speed.
- Then, slowly add 1 cup boiling water while beating.
- Grease a 9×13-inch baking dish with nonstick cooking spray. Then, transfer the chocolate batter to the greased baking dish. Bake in the preheated oven for 25-30 minutes or until ready. Check the readiness of the chocolate mud cake using a toothpick inserted in the center, if it comes out clean – the cake is ready.
- Remove your easy Mississippi mud cake from the oven and top with 10 oz mini marshmallows. Then, return the chocolate mud cake to the hot oven. Bake for additional 2-4 minutes or until mini marshmallows is puffed and lightly browned. Remove the baking dish from the oven and let it cool to room temperature.
- While the chocolate mud cake is cooling, prepare the chocolate topping. In a saucepan, melt 1 stick (½ cup) unsalted butter.
- Then, stir in ⅓ cup whole milk and 4 tbsp unsweetened cocoa powder. Cook, stirring constantly until the mixture is completely heated and combined (usually it takes about 2-3 minutes).
- Then, remove the saucepan from the heat, add 1 tsp vanilla extract and slowly add 3 cups powdered sugar, beating after each addition using an electric mixer.
- Pour the chocolate mixture over the cooled chocolate mud cake. Place the cake in the refrigerator to set the topping. Then, slice and enjoy!
