You can freeze these easy ricotta pancakes. Let it cool completely before freezing. Stack pancakes with parchment paper between them. Then, place them in a freezer-safe container or a freezer-safe plastic bag.

You can make your own variation of these fluffy pancakes with a ricotta cheese recipe. add more or less sugar/vanilla extract, depending on your taste. You can add blueberries, lemon zest, or mini chocolate chips to the batter.
