HOW TO MAKE CHICKEN BACON RANCH CASSEROLE WITH POTATOES?
- preheat oven to 450F. Grease a 9×13 inch casserole dish with oil spray, Cut potatoes into one-inch dice
- In a large mixing bowl, mix potatoes with ¼ cup ranch dressing. Add salt and pepper to taste
- Transfer potatoes to the greased casserole dish.
- Bake potatoes for 30 minutes, mixing one time through cooking to ensure they all cook evenly.
- Meanwhile, mix chicken with ¼ cup ranch dressing and marinate while potatoes cook.
- When potatoes are done, place chicken on top of potatoes and bake 20 mins more (covered with aluminum foil) or until chicken is done. Take the casserole dish out of the oven and top chicken and potatoes with crumbled bacon, cheese, and green onions.
- Bake for 10 more minutes, uncovered until the cheese is melted and bubbly.

CAN YOU FREEZE CHICKEN BACON RANCH CASSEROLE WITH POTATOES?
You can cook the potatoes and the chicken, add the cheese, bacon, and green onions, cover the casserole with plastic wrap and freeze it until you are ready for the final bake.
I wouldn’t recommend you bake it the last time to melt the cheese.
Once you are ready to eat it, you can put it in the oven and bake it until the cheese is melted and everything is heated for about 30 minutes.
RECIPE TIPS:
- Remember to season the potatoes with salt and pepper, as well as the chicken. Do not rely solely on the ranch dressing for seasoning. It does need the extra punch.

This sounds very good and easy but here my issue with this that I’m hoping someone can help me with. I struggle putting raw chicken on top of partially cooked potatoes. Does this leave raw chicken juices in the dish? Do the potatoes turn out crispy or more of a steamed consistency? I prefer crispy.
I just stumbled across this recipe and saw your comment. I, too, like crispy potatoes. What I do is cook the potatoes on a parchment lined baking sheet on one side, the chicken on the other half. It might take two sheets as you don’t want food piled on each other so it will crisp up. When it’s all cooked I toss it together, top with cheese, cover with foil so the cheese melts, when ready to serve sprinkle scallions and crumbled bacon on it. This kept my potatoes crispy and not soggy with chicken juices.

If I was to make this in a crockpot, how long would I cook for? Is there anything you would change?
It is so quick to make it in the oven, I have never made it in the slow cooker, but you could try cooking the potatoes on low for 2 hours, then adding the chicken mixture and cooking it for another two hours. Then just add the cheese and continue cooking until melted.
Can you freeze this before or after baking?
I would recommend freezing this casserole after baking. Potatoes Can oxidize if left uncooked.
Everyone loved it! In fact, it was gone before I could take a picture! I diced up a red bell pepper and some onion and added it to the chicken before adding it to the potatoes. I used seasoned salt for extra flavor. I also mixed up cheese- Colby Jack and regular cheddar.
