Who doesn’t like eggs, sausage, and bread? Well, how about putting it all together and baking them to make a great-tasting egg “sandwich”?

Imagine chopped green onions, red bell pepper, cooked sausage, egg, and cheese baked into a delicious hollowed out bread “boat” until the cheese is all bubbly and the egg is fluffy.

These are so delicious, you can serve them for a fancy brunch event too. They look spectacular and so easy to make and eat too!

No forks or knives needed. You will be the kitchen queen/king because everyone will be cheering for these beauties.

SAUSAGE EGG BOAT INGREDIENTS:

  • Demi sourdough baguettes: these are just baguettes that are half the size of regular ones. You can find them in the bakery section of your grocery store.
  • Kielbasa: I just happen to love kielbasa, but you can use any sausage you like best. Breakfast sausage would work perfectly too.
  • Eggs: always look for good quality eggs that are fresh. Remember before buying them to check the expiration date on the package, and if you are not sure how old they are, use the water bowl method. Submerge the eggs in water. If they float, they are no longer good. A fresh egg should sink to the bottom and a good although not so fresh one, will float halfway.
  • Heavy cream: mixing it with the eggs will make them creamier. If you don’t have heavy cream you can use a dollop of sour cream or even half and half.
  • Cheddar cheese: I love sharp cheddar cheese, but you can definitely use the cheese you like the most,
  • Green onions: I use green ones instead of the regular white onions because I love the green specks in the egg mixture.
  • Red bell pepper: again, the red specks look so pretty and it gives the eggs a great taste!
  • Salt and pepper to taste: always try to use kosher salt and freshly ground black pepper whenever possible.

HOW TO MAKE EGG BOATS?

  1. Preheat the oven to 350F. Hollow out the insides of the baguettes to make a “boat”
  2. Cut the kielbasa into small dice and cook it until brown. If using sausage, cook it according to package directions and cut into bite-size pieces
  3. In a medium-sized bowl, mix together eggs, chopped red bell pepper, green onions, browned kielbasa, and heavy cream
  4. Season egg mixture with salt and pepper and mix in the Cheddar cheese
  5. Spoon egg mixture inside the egg boats and bake for 25-30 mins or until the center is set. If you are cutting them to serve, let them cool for a few minutes before cutting them.

WHAT TOPPINGS CAN I ADD?

You can add the veggies of your choice, like green and red bell peppers, yellow onion, minced garlic, chopped jalapenos, whole kernel, chopped cherry tomatoes, corn, or broccoli florets.

If you don’t like Kielbasa or sausage, you can definitely make them only with veggies, or you can add chopped cooked chicken breast, turkey breast, diced ham, or pepperoni.

Pick the cheese you like the most. I love sharp cheddar, but you can use pepper Jack, fresh mozzarella, Mexican blend, or the cheese of your choice.

You can also add spices like Italian spices and use chopped tomatoes, fresh basil, and fresh mozzarella to make an Italian-style egg boat.

Want to make it Mexican? Use chopped jalapenos, add dried cumin and oregano to the egg mixture, some whole kernel corn, cooked and rinsed red beans, and Mexican cheese blend.

MAKE AHEAD AND FREEZING EGG BOATS:

This is a great idea to have a delicious breakfast always on hand.

You make the boats, bake them, let them cool completely, wrap them in foil, then store them in freezer bags and freeze for up to three months.

Whenever you want to eat them, just thaw and bake for 5-10 mins until warm.

  • 8 oz sharp Cheddar cheese, shredded
  • 3 green onions, thinly sliced
  • 1 red bell pepper, chopped small dice
  • Salt and pepper to taste
