This easy almond cookie recipe makes light, chewy cookies that are of almond flavor from both ground almonds, almond extract, and sliced almonds.

HOW TO MAKE ALMOND BUTTER COOKIES

Follow the easy almond cookies recipe below and read through the frequently asked questions and pro tips to bake the best butter almond cookies.

  • Step 1. Preheat oven to 400 degrees
  • Step 2. Cream butter and sugar together using an electric mixer until light and fluffy (about 3 minutes). If using powdered sugar instead, cream together with the butter the same way

CAN YOU FREEZE ALMOND BUTTER COOKIES?

These cookies freeze well however I can’t guarantee there will be any left to freeze!

Place cooled cookies in an air-tight container or sealed Ziploc bag and freeze for up to 3-months.

RECIPE TIPS

  1. If you can’t find already ground almonds, simply place whole almonds in a food processor and process until fine
  2. Do not overbake these cookies! They should be only slightly browned and still soft to the touch when they come out of the oven
