This two-ingredient recipe is perfect for any weekday dinner. Slow cooker salsa chicken is very easy to make and only takes 5 minutes to prepare. Just place all of the ingredients in the slow cooker before work and arrive home to a delicious warm meal.
Use this flavorful shredded chicken on tacos, burrito bowls, salad, or even on scrambled eggs! This chicken is also perfect for meal prep, you can make it ahead of time and store it in the fridge or freezer and add it to all of your meals!
2-INGREDIENT SLOW COOKER SALSA CHICKEN
- 2 Cups salsa of choice;
- 2 pounds of chicken breast;
HOW TO MAKE SLOW COOKER SALSA CHICKEN FROM SCRATCH:
- Step 1: Place chicken breast into the slow cooker. Optional: season with salt and pepper.
- Step 2: Pour salsa into the slow cooker, mix well until all chicken is covered in salsa. Cook on high for 4 hours or 8 hours on low.
- Step 3: Remove chicken from slow cooker, shred using two forks, or a hand mixer.
- Step 4: Add shredded chicken back into the slow cooker and mix with leftover salsa juices.
TIPS TO MAKE PERFECT SALSA CHICKEN
- Do not add a lot of salt if you are using store-bought salsa. Some salsas are packed with salt.
- Add extra spices to give the chicken more taste. Add spices such as cumin, paprika, and garlic powder.
- If you feel that your salsa is not spicy enough, add tabasco or spicy sauce of choice after step 4.
WHAT TO SERVE WITH SLOW COOKER SALSA CHICKEN?
Serve this Salsa chicken with Mexican tortilla, cilantro, and onions to make authentic Mexican tacos de pollo. This chicken is also very good as salad toppers or burrito bowls.
CAN YOU FREEZE SALSA CHICKEN?
Freezing salsa chicken is completely fine. It is great to freeze the chicken if you want easy microwavable dinners.
