Tender-cooked squash and onions are mixed with milk, egg, cheddar cheese, and crunchy, buttery cracker crumbs in this comforting yellow squash casserole.

If you want to make this casserole dish ahead of time, keep the ingredients separate until baking.

While the oven is preheating, toss the ingredients together and top with crushed crackers and cheese.

How To Make Yellow Squash Casserole?

  • Step 1. Preheat oven to 400ºF. Add the chopped onion, squash, and water to a skillet over medium heat. Cover and cook for 5 minutes, then drain well and transfer to a mixing bowl.

  • Step 2. Mix the cracker crumbs and cheese in a mixing bowl.

  • Step 3. Beat the milk and eggs together in a separate bowl.

  • Step 4. Add half of the cracker cheese mixture, the melted butter, and the egg and milk mixture to the squash and toss together—season with salt and pepper.

  • Step 5. Transfer to a 9×9-inch baking dish and add the remaining cracker mixture to the top of the casserole, and dot with 2 tbsp butter.

  • Step 6. Bake for 25 minutes, until golden brown.

Can I Make Yellow Squash Casserole Ahead Of Time?

To save time, you can pre-cook the onions and squash and prepare the shredded cheese and crushed crackers.

Do not mix the ingredients until ready to bake in the oven, or the crackers will get soggy!
