The weather is warming up and we are missing traveling and extended family vacations. Some meals remind us of all that and for me, shrimp cocktails do that perfectly.
MARINATED GRILLED SHRIMP
This recipe has a twist to it, in that we use the sauce to marinate the shrimp and then we grill them. Marinated grilled shrimp form a great glaze when exposed to heat, and searing them on a hot grill for a few minutes gives them a smokiness that enhances their flavor. This marinade is one of the easiest and best ones I have tried.
Simple ingredients like tomato sauce, minced garlic, red wine vinegar, olive oil, basil, and cayenne pepper make it amazing. Just mix everything up, add the shrimp and let time do its thing.
HOW TO MARINATE SHRIMP FOR GRILLING
- In a small bowl, mix all the ingredients except for the shrimp
- Add the shrimp to the bowl, mix carefully, and put them in the fridge to marinate (covered) for up to one hour.
- Put the shrimp in skewers and grill for 3 minutes on each side.
HOW TO SEASON GRILLED SHRIMP?
Once you grill the shrimp, just season lightly with salt and pepper and serve with a wedge of lemon.
Add a sprinkling of chopped fresh basil and you’re done.
WHAT TO SERVE WITH GRILLED SHRIMP?
Since you already have the grill fired, you might as well grill some veggies to go with your shrimp.
Bell peppers wedges and green onions with lime juice make for a great side dish. White rice and a side salad are great too. How about corn tortillas and guacamole? Grilled shrimp make great tacos.
TIPS FOR THE BEST GRILLED SHRIMP;
- Let the shrimp marinate for at least 30 mins, but one hour is way better.
- Don’t add too much acid or they will start cooking while marinating. Acid can cook shrimp if it is added in larger quantities.
- Have your grill super hot, so when you put your shrimp on it, they sear instead of just cook. You want those nice grill marks on them.
- Do not overcook the shrimp. 3 minutes on each side is enough to cook them if the grill is hot.
- You can leave the tail on just so they look prettier
- Serve them with lime wedges. They do need a bit of lemon juice as a finishing touch.
- When skewering, pierce through the end and the top so they curl nicely when grilled.
BEST MARINATED GRILLED SHRIMP
Ingredients
- 3 garlic cloves, minced
- ⅓ cup olive oil
- ¼ cup tomato sauce
- 2 tbsp red wine vinegar
- 2 tbsp chopped fresh basil
- ½ tsp salt
- ¼ tsp cayenne pepper
- 2 lb fresh shrimp, peeled and deveined
