Cinnamon Coffee Cake
This easy coffee cake with Bisquick uses a pancake and baking mix in the streusel and cake base which cuts your preparation time in half and creates a delicious moist cake.
It’s made with only a few extra ingredients that you likely already have around your house like sugar, cinnamon, milk, and egg.

WHAT YOU’LL NEED FOR THIS CINNAMON COFFEE CAKE RECIPE:
For the cinnamon streusel:
- 1/3 cup Bisquick Original pancake and baking mix – this mix is a great time saver! It has flour and other required baking ingredients already in it
- 1/3 cup packed brown sugar – I used dark brown sugar, but light brown will work just as well
- ½ tsp ground cinnamon – this adds that classic cinnamon flavour to the coffee cake. Feel free to increase the amount of spice if desired
- 2 tbsp firm butter or margarine – unsalted works best, make sure your butter is nice and cold before using
For the coffee cake:
- 2 cups Bisquick Original pancake and baking mix – this is the base of the coffee cake, and again, is an excellent time-saver!
- 2/3 cups milk or water – milk or water helps to add moisture to the cake. Try to use 2% milk if possible as it will add more flavor and moisture
- 2 tbsp sugar – granulated sugar or brown sugar will work. Only a little bit of sugar is required because the streusel is already sweet
- 1 egg – the egg helps to bind all the ingredients together and adds structure to the cake
HOW TO MAKE A CINNAMON COFFEE CAKE WITH BISQUICK?
- Preheat your oven to 375 degrees F. Grease a 9-inch round spring-form pan or cake pan using non-stick cooking spray. Set aside
- In a small bowl, mix the streusel ingredients together until crumbly. Set aside
- In a medium bowl, whisk the coffee cake ingredients together until combined
- Pour the coffee cake batter into the prepared pan and sprinkle the streusel mixture over top
- Bake in preheated oven for 18-22 minutes, or until golden brown.
HOW DO YOU KEEP IT MOIST?
Coffee cakes sometimes end up dry, but there are ways that you can make sure yours comes out moist.
One of the easiest ways to keep it moist is to not overbake.
Make sure you only bake until the top browns, so keep an eye on yours.
Another way to increase moisture is to use milk higher in fat. Avoid using skim milk or nut milk if possible and chose 2%.
CAN YOU FREEZE BISQUICK COFFEE CAKE?
This coffee cake freezes well, so it can be made ahead of time.
Allow the cake to cool completely, wrap it tightly in plastic wrap, and store it in a freezer bag. The cake can be frozen for up to 3-months.
RECIPE TIPS:
- If possible, make sure your milk and egg are at room temperature. This helps all the ingredients combine more evenly.
- Using a springform pan is much easier than a cake pan, as you don’t have to flip the cake to release it. If you have a springform pan available, use it!
- This cake is best served warm. Let the cake cool for about 15 minutes prior to serving, or microwave it for 15-20 seconds to re-heat it.
