- 2 medium sweet potatoes
- 1 tablespoon vegetable oil
- Salt and black pepper, to taste
- 2 tablespoons butter, melted
- 1 teaspoon ground cinnamon
- ¼ cup chopped pecans
- ¼ cup maple syrup
- ½ teaspoon pure vanilla extract
- ½ teaspoon kosher salt
Instructions
- Prepare the potatoes. It’s best to have sweet potatoes.
- Wash the potatoes thoroughly and lay them on a cutting board. Line up chopsticks as a guide along either side of the sweet potato. Make cuts on the top of the potato. Add salt, pepper and vegetable oil.
- Prepare your baking dish. Transfer the potatoes to it. Preheat the oven to 425 degrees. Bake the potatoes for 30-40 minutes until soft.
- Next, prepare the sauce. To do that, in a deep bowl, mix melted butter, chopped pecans, ground cinnamon, vanilla, kosher salt, and maple syrup.
