HOW TO MAKE BREAKFAST BRUNCH CASSEROLE?
- Preheat the oven to 350F and lightly grease an 8×8 inch casserole dish. You can use a 9×13, but for this size, use 12 eggs.
- Cook bacon in a large skillet until brown. Remove cooked bacon from the skillet and place it on a plate with a paper towel. Leave about one tbsp of the bacon grease on the skillet and discard the rest.
- Add the onion and bell peppers to the skillet and cook until cooked through
- In a large bowl, mix together eggs, milk, cheese, hash brown potatoes, salt, pepper, and dill
- Add crumbled bacon, onion, and peppers to the bowl and mix well
- Pour egg mixture into the greased casserole dish and bake for 35 to 45 minutes until the toothpick comes out clean. If using the 8×8 inch casserole dish, bake covered for the first 30 mins
CAN BREAKFAST CASSEROLE BE MADE AHEAD?
You can definitely make some of the steps ahead. Cook and crumble the bacon, saute the veggies, and put the frozen hash browns in the fridge so they can thaw overnight.
The next morning all you have to do is mix everything together and put the casserole in the oven.
WHAT CAN YOU PUT IN A BREAKFAST BRUNCH CASSEROLE?
You can add whatever you like to your casserole. Cooked breakfast sausage, ground beef, or chopped ham. On the veggie side, you can add only red bell pepper, jalapenos, green onions, broccoli, leeks, and tomatoes.
You can also substitute the potatoes with diced sweet potatoes. The cheese you use is also up to you. Mozzarella, Cheddar, Provolone, Monterey Jack, or a mix of any of these.
CAN YOU FREEZE BRUNCH CASSEROLE BEFORE BAKING?
Yes, you can. Let your bacon and veggies cool before adding them to the egg mixture. Mix everything together well, pour it into the casserole dish, and cover the whole thing with plastic wrap and then with aluminum foil.
Freeze it for up to 3 months. Take it out of the freezer the night before, put it into the fridge to thaw overnight, and bake in the morning.
WHAT ABOUT THE LEFTOVERS?
You can keep any leftovers in the fridge for up to two days in an airtight container, or put them in a freezer bag, or wrap them in plastic wrap and aluminum foil and freeze for up to three months.
RECIPE TIPS
- If you want a thicker casserole, you can use an 8×8 square casserole dish and use only 10 eggs. If you do this, I recommend you bake your casserole covered with foil for 45 mins and remove the foil for the last 10 mins of baking. Always test for doneness by inserting a toothpick and it comes out clean.
- If you want less fat in your meal, discard the bacon fat, wipe clean the skillet and spray a little cooking spray to saute your veggies.
- If you want to add cubed bread to your egg casserole, refrigerate it overnight or at least for two hours to let the bread soak up the egg mixture.
