Ingredients

  • 1 ¼ cups canned chickpeas rinsed and patted dry with a paper towel;
  • ½ cup plus 2 tbsp natural peanut butter (or almond butter), room temperature;
  • ¼ cup honey;
  • 2 tsp vanilla extract;
  • 1 tsp baking powder;
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350°F.
  • Using a food processor combine chickpeas, peanut butter, honey, vanilla extract, and baking powder until smooth.
  • Transfer this thick and sticky dough into a bowl, add chips and mix well.
  • Line baking sheets with parchment paper or use a silicone mat. Moisten your hands with water. Then form this sticky dough into 1 ½ inch balls. Place them onto the prepared baking sheet and bake in a preheated oven for 10 minutes.
