Roasted Brussels Sprouts

I’ve come to love brussels sprouts. This wasn’t always the case though. They have a strong flavor and I had to learn to cook them to my liking. For me, the best way is to oven roast brussels sprouts with garlic, lemon juice, and olive oil.

I love the way they charr when properly roasted. At first, I wouldn’t let them roast for too long, just enough to be cooked through, but I finally realized brussels sprouts with olive oil and garlic need to get to that point of caramelization of the outer leaves that gives them the unique and delicious taste that I’ve come to love.

Lots of lemon juice for me and the final touch, freshly grated Parmesan cheese!

INGREDIENTS FOR ROASTED BRUSSELS SPROUTS

  • 1 lb Brussels sprouts, rinsed, ends trimmed, and rough outer leaves removed
  • Minced garlic (1 tbsp)
  • 1 tsp lemon juice (or more to your liking)
  • 2 tbsp extra virgin olive oil
  • Salt and freshly ground pepper
  • ¼ cup Parmesan cheese (optional)

HOW TO MAKE ROASTED BRUSSELS SPROUTS

  1. preheat oven to 400F
  2. Trim ends of brussels sprouts and remove the outer leaves
  3. Rinse trimmed brussels sprouts
  4. Place them in a bowl and add garlic, lemon juice, and olive oil
  5. Toss to coat well
  6. Add salt and freshly ground pepper to taste
  7. Place seasoned brussels sprouts in a cast-iron skillet on a single layer
  8. Roast for 25-30 mins stirring once halfway through the cooking, or until slightly charred

HOW TO ROAST BRUSSELS SPROUTS WITH GARLIC

To ensure even roasting, choose brussels sprouts that are even in size, place them on the skillet or a casserole dish, in a single layer, and do not overcrowd the pan.

Make sure they have enough space in between them. If you overcrowd the skillet, they might steam instead of roast properly.

HOW LONG TO BROIL BRUSSELS SPROUTS

If your brussels sprouts are cooked through but not brown enough for your liking, turn on the broiler and broil them for 5-8 minutes or until they reach the desired level of browning.

CAN GARLIC ROASTED BRUSSELS SPROUTS BE MADE AHEAD OF TIME?

You can definitely make them ahead of time, put them in the fridge, and reheat when ready to serve. They will keep well in the refrigerator for 3-4 days.

CAN OVEN-ROASTED BRUSSELS SPROUTS BE FROZEN?

Yes, they can be frozen in resealable freezer bags or containers for up to 12 months.

HOW TO REHEAT OVEN-ROASTED BRUSSELS SPROUTS?

There are two ways to reheat oven-roasted brussels sprouts. You can pop them in a 350F oven on a lightly greased baking sheet for 5-8 minutes, or you can microwave them for 1 minute and 30 seconds.
