Some of us have been working from home, and for me, that means eating more and gaining a few unwanted pounds. I’ve been trying to eat lighter and one of the best food ingredients for doing that is cauliflower.
This healthy cauliflower fritter recipe has definitely helped me achieve my goal.
The key is using just the right amount of oil to fry them. Healthy and tasty, this easy cauliflower recipe will satisfy your hunger without the guilt.
Even the little ones will enjoy this one. You can serve them with a dollop of sour cream, or yogurt if you want to make it healthy all the way. Give them a try, this will be the best cauliflower fritters you’ll ever make!
HOW TO PREPARE HEALTHY CAULIFLOWER FRITTERS
- In a large pot, heat some water, add salt and bring to a boil. Add the cauliflower florets and cook until tender, about 5 minutes
- Once cooked, transfer florets to a cutting board and finely chop them
- Transfer chopped cauliflower to a mixing bowl and add flour, eggs, garlic, scallions, salt, and pepper to taste. Mix well until combined.
- Heat 2 tbsp olive oil in a medium-sized skillet. Scoop up 2-3 tbsp of mixture into the skillet and flatten them out to form a patty.
- Cook for 2 minutes on each side, or until golden brown. Transfer fritters to a plate lined with paper towels.
- Serve with chopped scallions, sour cream, or yogurt.
WHAT GOES WITH HEALTHY CAULIFLOWER FRITTERS?
This easy cauliflower fritters pair perfectly with grilled fish or chicken for a light and balanced meal.
Low carb and good for you, just a dollop of yogurt or sour cream on top are all it takes to make them perfect.
CAN YOU FREEZE HEALTHY CAULIFLOWER FRITTERS?
Yes. You can freeze them before or after frying them.
If you want to freeze them before frying, just scoop 2-3 tbsp of mixture into a square of wax paper, form into a patty, add another square of wax paper, and top with another patty.
Do not stack more than two or they will lose their shape. Once frozen, you can stack as many as you want. Store them in a freezer bag with wax paper between each patty.
You can freeze them after frying and just thaw them and put them in the toaster oven before serving to toast them up a little bit, or heat them up in a hot skillet with a bit of spray olive oil.
TIPS FOR BAKING THE PERFECT HEALTHY CAULIFLOWER FRITTERS
- You can rice your cauliflower in a food processor and use it raw, but blanching it for a few minutes before chopping reduces the frying time.
- Use whole wheat flour if you want to add more fiber to your recipe
- Do not fry them at high temperatures, or they will brown too quickly before cooking through.
- Scoop out the right amount each time, using an ice cream scoop
- Don’t forget to season with salt and pepper. You can add a bit of paprika and some shredded cheese to make them a bit different.

Cooked in Avacado oil, and used almond flour and some fell apart but …hey, cauliflower hash browns lol 😂

Can bake in oven?
I wouldn’t recommend it. The batter is not solid enough, but you can certainly try!
Any suggestions on how to make it vegan?
Try replacing the eggs with aquafava. This is the liquid that canned chickpeas have. Open a can of chickpeas and don’t throw out the water. Use it instead of the eggs.
