HOW TO MAKE CINNAMON ROLLS WITHOUT YEAST?
- Whisk dry ingredients together (flour, baking powder, sugar, cinnamon & salt) in a large bowl until combined
- Melt butter and milk together in a small saucepan over low heat until the butter is just melted
- Pour milk mixture into the flour mixture. Use a spatula to mix together until just combined
- Knead the dough for 1 minute on a lightly floured work surface until it comes together. If it starts to feel too sticky, add a touch more flour.
- Cover the dough with a damp towel and let it rest for 15 minutes
- preheat oven to 350 degrees. Liberally grease an 8-inch square baking dish with butter or non-stick cooking spray, set aside
- Roll out dough into a 10×14 inch rectangle. Brush dough with melted butter and sprinkle with cinnamon and sugar mixture
- Roll up dough starting at the long end, creating a tight log
- Slice into 9 rounds. Lay rolls out on the greased baking dish and bake in preheated oven for 25-30 minutes until pale golden brown.
- Mix icing ingredients together using a hand mixer until fully combined
- Allow rolls to cool fully prior to topping with icing
CAN YOU FREEZE NO YEAST CINNAMON ROLLS?
Unfrosted cinnamon rolls can be frozen in an airtight container for up to 3-months. Allow rolls to return to room temperature prior to icing and serve. Freezing rolls that have already been frosted are not recommended.
HOW TO STORE CINNAMON ROLLS?
For best results, allow the rolls to cool completely to room temperature and store them in an airtight container.
Store icing in a separate airtight container as well. Both can be kept at room temperature for 3-5 days.
WHAT’S THE BEST FROSTING FOR CINNAMON ROLLS?
Cream cheese frosting is the classic topping for cinnamon rolls however a classic vanilla buttercream will work just as well if you do not have cream cheese on hand. Store-bought cream cheese icing can work too!

DO CINNAMON ROLLS NEED TO BE REFRIGERATED?
The rolls themselves do not need to be refrigerated, however, because the frosting has dairy in it I would recommend keeping it stored in the fridge.

I use spelt instead of AP flour and sometimes it can be tricky with certain recipes. My dough was pretty sticky and a bit slack still at the end, so I didn’t have great hopes but after I took them out of the oven these turned out absolutely great, even despite the flour substitution and my own lack of experience in these types of dough in general. My family ate them up so fast. Really recommend this recipe, clearly it’s pretty much foolproof!
