Preheat the oven to 370F. Add eggs, milk, and olive oil to the bowl of your mixer
Beat at medium speed for 2 minutes until well blended. Add flour and baking powder and beat until smooth.
Mix in one cup of shredded cheese.
Pour half of the batter into a 9x13 baking dish.
Distribute the shredded meat on top of the batter, evenly. Sprinkle one cup of shredded cheese on top of the meat.
Spoon the other half of the batter carefully on top of the meat and cheese.
Bake for 45-60 minutes or until golden brown and toothpick comes out clean. Let rest for 10 mins, turn over into a platter of the wooden board, cut into pieces and serve.
