This delicious chicken rice and broccoli one-pan recipe will have your taste buds going crazy! My mouth is watering just looking at it!

  • 3 tbsp extra virgin olive oil
  • 1/2 medium yellow onion
  • 1 pound boneless skinless chicken breasts
  • 1 tsp kosher salt
  • 1 tsp freshly ground pepper
  • 1 cup uncooked extra long grain white rice
  • 2 1/2 cups broccoli florets (bite sized pieces)
  • 2 1/2 low sodium chicken broth
  • 2 cups shredded extra sharp cheddar cheese


  • On the stovetop heat 2 tbsp the olive oil and sauté the onions until translucent.
  • Season the chicken with salt and pepper.
  • Add the chicken to the skillet and cook.
  • Toast the rice in the remainder of olive oil.
  • Pour in the chicken broth and stir gently.
  • When the rice is 80-90% cooked add in the broccoli to steam cook.
  • Check all the chicken broth has been absorbed.
  • Now stir in 1/2 cup of cheese. Sprinkle 1 cup of cheese over the top. Enjoy!
