CARAMEL APPLE PECAN COBBLER

This easy apple cobbler is a perfect combination of sweet caramel sauce, tart apple slices, and flavorful, crispy topping.

Ingredients

For the filling:

  • 9 apples, peel, core, and slice;
  • cup brown sugar;
  • cup granulated sugar;
  • 2 tsp lemon juice;
  • 2 tsp corn starch;
  • 1 tsp cinnamon;
  • ¼ tsp nutmeg;
  • 1 cup pecans, chopped.

For the caramel sauce:

  • ¾ cups butter;
  • 1 cup light brown sugar;
  • ¼ cup milk;
  • 1 tsp vanilla extract.

For the crumble topping:

  • 3 cups all-purpose flour;
  • 2/3 cup brown sugar;
  • 2/3 cup granulated sugar;
  • 3 tsp baking powder;
  • 1 tsp salt;
  • 1 cup (2 sticks) butter, cut into small pieces;
  • 2/3 cup boiling water.

For the additional cinnamon topping:

  • 3 tbsp granulated sugar;
  • 1 tsp cinnamon.

Instructions

  • Prepare the filling. In a large bowl, stir together apples, brown sugar, granulated sugar, cornstarch, lemon juice, ground cinnamon, and ground nutmeg until combined. Then, stir in chopped pecans. Set aside.
  • Prepare the caramel sauce. Melt the butter in a saucepan. Then, add light brown sugar and milk. Stir until combined and bring to a boil. Reduce the heat to low and cook for 12 minutes stirring constantly. Then, remove from the heat and stir in vanilla extract. Let it cool for 10 minutes. Then, pour over the apple filling. Mix until combined.
  • Preheat the oven to 375°F.
  • Transfer the caramel apple filling to a 9x13 inch baking dish.
  • In another mixing bowl, mix together all-purpose flour, brown sugar, granulated sugar, baking powder, and salt. Add butter and mix using a pastry blender. The mixture should be crumbly. Then, add boiling water. Mix until combined. Transfer this crumbly topping to the baking dish. Spread it evenly over the caramel apple filling.
  • Prepare the additional cinnamon topping. In a bowl, mix together granulated sugar and ground cinnamon. Then, sprinkle over the crumbly topping. Bake easy apple cobbler in the preheated oven for 30-35 minutes or until golden brown. Enjoy!
