Chicken Stew Recipe

Ingredients

  • - 2 tbsp butter;
  • - 2 carrots, peeled and sliced;
  • - 1 celery stalk, chopped;
  • - 3 garlic cloves, minced;
  • - 1 tbsp flour;
  • - 1 ½ lb. chicken breasts (boneless skinless);
  • - 3 sprigs fresh thyme;
  • - 1 bay leaf;
  • - ¾ lb. baby potatoes, quartered;
  • - 3 cups chicken broth;
  • - fresh parsley, chopped;
  • - salt;
  • - pepper.

Instructions

  • Melt butter in a large pot. Then, add sliced carrots, chopped celery, salt and pepper, and stir. Cook until carrots are slightly softened (five to seven minutes). Add minced garlic, stir. Add all-purpose flour and mix.
  • Add chicken breasts, fresh thyme, bay leaf, potatoes, chicken broth, salt and pepper. Cover with a lid and cook for 15-20 minutes or until potatoes are tender and the chicken is ready. Then, turn off the heat. Remove the chicken breasts from a pot and transfer to a plate. Shred each of the chicken breasts using two forks. Then, return shredded chicken to a pot. Sprinkle with chopped fresh parsley and serve warm. Enjoy!
