Add chicken breasts, fresh thyme, bay leaf, potatoes, chicken broth, salt and pepper. Cover with a lid and cook for 15-20 minutes or until potatoes are tender and the chicken is ready. Then, turn off the heat. Remove the chicken breasts from a pot and transfer to a plate. Shred each of the chicken breasts using two forks. Then, return shredded chicken to a pot. Sprinkle with chopped fresh parsley and serve warm. Enjoy!
