Taco Chicken Salad

Ingredients

  • For the salad:
  • 1 cup shredded chicken
  • 1/2 15 oz can black beans, rinsed and drained
  • 1/4 red onion, diced
  • 1/2 cup roasted red peppers, diced
  • 1/4 cup pickled jalapeƱo, finely diced
  • 1/2 cup lettuce, sliced
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup mayonnaise
  • 1/2 tbsp taco seasoning
  • green onion, chopped (optional)
  • For homemade taco seasoning:
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • pinch dried oregano
  • 1/2 tsp cayenne powder (optional)

Instructions

  • In a large bowl combine all ingredients except mayonnaise and taco seasoning.
  • In a small bowl mix mayonnaise with half of tablespoon taco seasoning.
  • Add the dressing to chicken mixture and serve immediately.

Notes

If you plan to store your taco chicken salad for a few days, I
recommend you not to add lettuce. It's better to stir in fresh chopped lettuce just before serving
