Ingredients

  • 4 demi sourdough baguettes
  • ½ lb Kielbasa or breakfast sausage
  • 8 eggs
  • ½ cup heavy cream
  • 8 oz sharp Cheddar cheese, shredded
  • 3 green onions, thinly sliced
  • 1 red bell pepper, chopped small dice
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350F. Cut off the top and hollow out the insides of the baguettes to make a “boat”
  • Cut the kielbasa into small dice and cook it until brown. If using sausage, cook it according to package directions and cut into bite-size pieces
  • In a medium-sized bowl, mix together eggs, chopped red bell pepper, green onions, browned kielbasa, and heavy cream
  • Season the egg mixture with salt and pepper and mix in the Cheddar cheese
  • Spoon the egg mixture into the egg boats and bake for 25-30 mins or until the center is set. If you are cutting them in half to serve, let them cool for a few minutes before cutting them.
