Preheat the oven to 350F. Cut off the top and hollow out the insides of the baguettes to make a “boat”
Cut the kielbasa into small dice and cook it until brown. If using sausage, cook it according to package directions and cut into bite-size pieces
In a medium-sized bowl, mix together eggs, chopped red bell pepper, green onions, browned kielbasa, and heavy cream
Season the egg mixture with salt and pepper and mix in the Cheddar cheese
Spoon the egg mixture into the egg boats and bake for 25-30 mins or until the center is set. If you are cutting them in half to serve, let them cool for a few minutes before cutting them.
