The Best Trisha Yearwood’s Crock Pot Pork Tenderloin

Ingredients

  • 2 ½ - 3 lb pork tenderloin
  • ½ teaspoon dried thyme
  • 1 teaspoon freshly grated ginger
  • 2 garlic cloves, minced
  • 1 tablespoon honey
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon vegetable oil
  • 3 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

  • Season the pork tenderloin with salt, pepper, and dried thyme
  • Heat the oil in a large skillet and brown the tenderloin on all sides
  • Put the browned tenderloin into the crockpot and add all other ingredients, except the cornstarch. Cook on high for 4 hours or on low for 8.
  • Take the tenderloin out of the crockpot and shred using two forks

To Make The Gravy;

  • Strain any juices left in the crockpot and place them in a small saucepan and bring to a simmer, reserving about ¼ cup. To the ¼ cup, add the cornstarch and stir until dissolved
    Add sauce/cornstarch slurry to the simmering sauce and cook until thickened. Serve shredded tenderloin with gravy
