Ingredients

  • 1 medium head cauliflower, cut into florets;
  • 2-3 large eggs;
  • ½ cup white cheddar cheese, grated;
  • ½ cup panko bread crumbs;
  • ¼ tsp onion powder;
  • ¼ tsp garlic powder;
  • ¼ tsp cayenne pepper;
  • salt and pepper, to taste;
  • vegetable oil for frying.

Instructions

  • Place cauliflower florets in a food processor and pulse until it resembles small crumbs. Transfer to a bowl and microwave for 3 minutes, or until slightly softened. Let cool to room temperature.
  • Squeeze out the excess liquid using a kitchen towel. Transfer to a large bowl and add two eggs, white cheddar cheese, panko bread crumbs, onion powder, garlic powder, cayenne pepper, salt, and pepper. Mix until combined. If the mixture doesn't stick together, add one more egg to the cauliflower mixture.
  • Heat vegetable oil in a large skillet over medium heat. Add ⅓-¼ cup of cheesy cauliflower mixture to a hot skillet and form a patty using a spatula. Cook for 2-4 minutes on each side or until golden brown. Repeat with the remaining cauliflower mixture and add more oil if needed. Serve hot with sour cream, green onions, or chopped parsley.
