  • 2 large bone-in chicken breast halves with skin
  • ¼ cup extra-virgin olive oil
  • ½ tsp garlic, minced
  • ½ tsp coarse sea salt
  • ½ tsp cracked black pepper
  • ¼ tsp dried rosemary
  • ¼ tsp dried basil


  • In a small bowl, mix the minced garlic with the extra virgin olive oil, rosemary, basil, salt, and cracked pepper.
  • Rub the chicken breasts with this mixture and refrigerate covered for 45 minutes.
  • preheat oven to 375F
  • Place the chicken breasts in a baking dish and bake from 45 to 60 mins depending on the size of the breasts, until the juices run clear or a meat thermometer reads 165F.
