Soak pinto beans in water overnight (add water to cover by 2-3 inches)
Drain beans and place them in a large pot.
Add chopped onion and bacon to the pot.
Mix in two cans of diced tomatoes
Sprinkle the spices on top.
Pour in freshwater to cover, bring to a boil and simmer for 3 hours
After 3 hours, add the chopped cilantro and cook for an hour more.
