  • 1 tbsp butter
  • ½ cup chopped green bell pepper
  • ¼ cup sliced green onions
  • 1 garlic clove, minced
  • 3 cups tomato-vegetable juice cocktail
  • 1 (8oz) bottle clam juice
  • ½ cup of water
  • ¼ tsp dried thyme
  • ¼ tsp dried basil
  • ¼ tsp red pepper flakes
  • 1 bay leaf
  • ½ tsp salt
  • ½ cup uncooked long-grain white rice
  • ½ cup whole kernel corn
  • ¾ lb fresh shrimp, peeled and deveined
  • Hot sauce to taste


  • In a large pot, melt butter and saute bell pepper, green onions, and garlic until translucent
  • Add the tomato-vegetable juice, clam juice, water, corn, and rice
  • Next, add your spices
  • Bay leaf goes in next
  • Bring to a boil, reduce heat and simmer for 15 minutes or until rice is cooked through
  • Once the rice is cooked, add the shrimp and cook for 5 more minutes.
  • Remove bay leaf, stir in hot sauce to taste, and serve.
