On the stovetop heat 2 tbsp the olive oil and sauté the onions until translucent.
Season the chicken with salt and pepper.
Add the chicken to the skillet and cook.
Toast the rice in the remainder of olive oil.
Pour in the chicken broth and stir gently.
When the rice is 80-90% cooked add in the broccoli to steam cook.
Check all the chicken broth has been absorbed.
Now stir in 1/2 cup of cheese. Sprinkle 1 cup of cheese over the top. Enjoy!
