Preheat oven to 375°F
In a small bowl, mix together freshly ground black pepper, Creole seasoning, garlic powder, onion powder, and cayenne pepper. Reserve 1 tsp of this mix for veggies.
Cut each shrimp into 2-3 pieces (depending on the size of the shrimp). Transfer chopped shrimps to the bowl, drizzle with 2 tbsp olive oil, and season with the mix of the seasonings (excluding reserved 1 tsp). Toss to coat. Set aside.
In a skillet, heat 2 tbsp olive oil. Then, add diced celery, diced shallot, diced bell pepper, and chopped jalapeno pepper. Saute for 4-5 minutes. Then, add reserved 1 tsp seasonings and minced garlic clove. Cook for 1 minute or until the garlic is fragrant. Then, add chopped shrimps. Cook for up to 3 minutes. Turn off the heat.
In a small bowl, mix together sharp cheese and jack cheese. Set aside.
Transfer vegetable and shrimp mixture to the large bowl. Add cream cheese, mayonnaise, and 1 cup of mixed cheeses. Mix together.
Grease baking dish with cooking spray. Place Creole Shrimp Dip mixture in a baking dish. Then, top with the remaining mix of cheeses. Bake in the preheated oven for 20 minutes. Garnish with cooked shrimps with tails, chopped green onion, or chopped parsley. Serve warm with crackers, veggies, or fresh bread.
