Preheat oven to 350°F. Grease a glass pie pan or a round cake pan with butter or cooking spray.
Mix together graham cracker crumbs, sugar and melted butter in a bowl. Transfer this mixture to the prepared baking pan. Press the dough firmly into the bottom and up the sides of the pan to create a crust. Bake in the preheated oven for 10 minutes or until golden brown. Let the crust cool completely. Then, refrigerate.
Melt unsweetened baking chocolate in the microwave. Let it cool to room temperature.
Cream softened butter in a mixing bowl. Add sugar and vanilla extract. Beat until light and fluffy. Then, add cooled melted chocolate. Mix until completely combined. Add eggs (one at a time), beat for 5 minutes. You need to beat the eggs for a long time to make a really fluffy pie. Transfer this chocolate filling to the cooled crust. Refrigerate.
Beat softened cream cheese in another mixing bowl until smooth. Then, add powdered sugar and vanilla extract. Beat until combined. Add ½ cup cooled heavy cream. Beat until combined. Then, add the remaining ½ cup heavy cream and beat until stiff peaks form. Place the whipped cream filling on top of the chocolate layer. Refrigerate.
Add chocolate chips and shortening to the microwave-safe bowl. Melt. Then, mix to combine. Spread this chocolate mixture in a thin layer on the back of the baking sheet. Refrigerate for 10-15 minutes or until hardened. Then, make the curls using a metal spatula or a knife. Decorate the French silk pie with these chocolate curls. Enjoy!
