BAKED BURRITO CASSEROLE RECIPE

Trust me, you and your lovely family will love this recipe. If I talk about our family, then boy loves Mexican and always look for it whenever out to the dinner, which is why I am on the lookout for more delicious Tex Mex recipes.

Ingredients

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 2 cups Mexican blend cheese, shredded
  • 1 medium onion, chopped
  • 1 can refried beans
  • 1 can cream of mushroom soup
  • 1/2 cup sour cream
  • 6 large flour tortillas
  • 1 tsp vegetable oil

Instructions

  • Preheat the oven to 350 degrees. In a frying pan cook ground beef and onion in oil until the beef is no longer pink. Drain well. Add refried beans and taco seasoning, stir well and heat through.
  • In a medium bowl mix cream of mushroom soup and sour cream. Spread half of this mixture in the bottom of a 9×13-inch baking dish.
  • Arrange a layer of 3 tortillas over a sour cream-soup mixture slightly overlapping them. Top tortillas with a layer of the beef mixture and sprinkle with half of the shredded cheese.
  • Continue to layer all of the remaining ingredients in the same order and top with the rest of the cheese.
  • Bake for 20 minutes or until cheese is melted and enjoy!

Notes

  • If you are afraid that your burrito casserole may become mushy, you can try toasting your tortillas before using them. Toast all tortillas together in the oven or individually sear them on low heat using your stovetop.

  • You may use ground turkey instead of ground beef. Or you could make an experiment and use the mix of ground beef and ground pork or any other type or combination of meat you love most.
