Perfect Apple Pie Cookies

Ingredients

For the filling:

  • 3 apples (about 1 lb.);
  • 1 ½ tbsp lemon juice;
  • 3 tbsp sugar;
  • 3 tbsp brown sugar;
  • 3 tbsp corn starch;
  • ½ tsp cinnamon;
  • a dash of nutmeg;
  • ¾ cup water.

For the pie crust:

  • 1 cup unsalted butter;
  • 2 ½ cups all-purpose flour;
  • 1 tsp sugar;
  • 1 tsp salt;
  • ¼ cup ice water.

For the cookies:

  • 1 ¾ cups apple pie filling;
  • 1 cup caramel sauce;
  • 1 egg;
  • ¼ cup sugar;
  • 1 tsp cinnamon.

Instructions

The filling:

  • Peel the apples, cut into 8 slices each apple. In a bowl mix together sliced apples and lemon juice. Set aside.
  • Mix sugar, brown sugar, corn starch, cinnamon, nutmeg, and water in a saucepan (or a pot) over medium heat. Boil for 2 mins whisking constantly.
  • Add sliced apples into a saucepan, mix, and simmer for 10 mins covered. Remove from heat and let cool.
  • Remove the chilled apples from the sauce, cut into small pieces.

The pie crust:

  • Chop butter into small, cubed pieces. Mix flour, salt, and sugar in a food processor add butter and pulse several times.
  • Add 2 tbsp of water, pulse once or twice, and repeat with the remaining water. Try to pinch some of the crumbly dough together with your fingers. If it holds together - the dough is ready.
  • Transfer the crumbly mixture to a clean surface and form two equal parts of pie crust dough, flatten and form two disks. Refrigerate for 1 hour.

The apple pie cookies:

  • Preheat oven to 350°F.
  • Roll out each piece of dough on a lightly dusted surface.
  • Cut the first pie crust into ½ inch strips, set them aside
  • Spread the caramel sauce over the second pie crust, then spread chopped apples evenly. Create a lattice top with ½ inch strips of pastry
  • Cut out the apple pie cookies using a round cookie cutter (about 2 ½ inch). Transfer them onto a baking sheet covered with parchment paper. Brush each cookie with a lightly beaten egg, then sprinkle with sugar and cinnamon. Bake in a preheated oven for 20-30 mins until golden brown.
