Peel the apples, cut into 8 slices each apple. In a bowl mix together sliced apples and lemon juice. Set aside.
Mix sugar, brown sugar, corn starch, cinnamon, nutmeg, and water in a saucepan (or a pot) over medium heat. Boil for 2 mins whisking constantly.
Add sliced apples into a saucepan, mix, and simmer for 10 mins covered. Remove from heat and let cool.
Remove the chilled apples from the sauce, cut into small pieces.
