This recipe is as simple as all recipes on our site. Pineapple Sunshine Cake is delicious, fluffy, and light. This is probably the best pineapple cake I have ever eaten.

Ingredients

  • Cake:
  • 1  box yellow cake mix
  • 4  eggs
  • 1/2 cup oil, (I used vegetable oil)
  • 1  (8 oz) can crushed pineapple with juice
  • Frosting:
  • 1 (8 oz) container whipped topping, thawed
  • 1 small box instant vanilla pudding
  • (8 oz) can crushed pineapple with juice

Instructions

  • Preheat oven to 350°F.
  • In a large mixing bowl mix together the cake mix, eggs, oil, and pineapple by using an electric mixer. Grease the 9x13 baking pan. Then pour the cake batter into the pan. Bake in a preheated oven for 25-30 mins. Allow the cake to cool completely in the baking pan on a wire rack.
  • To make the frosting: In another bowl, combine the whipped topping, pudding mix, and pineapple. Frost the top of the cooled cake. Decorate with pineapple
