Ingredients

  • 1 ½ lb thick sliced bacon
  • ½ cup chopped sweet onion
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped green bell pepper
  • 10 eggs
  • 1 cup milk
  • 1 (16 oz) package frozen hash brown potatoes, thawed
  • 1 cup shredded Cheddar or Mozzarella cheese
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp dried dill

Instructions

  • Preheat the oven to 350F and lightly grease an 8x8 inch casserole dish. You can use a 9x13, but for this size, use 12 eggs.
  • Cook bacon in a large skillet until brown. Remove cooked bacon from the skillet and place it on a plate with a paper towel. Leave about one tbsp of the bacon grease on the skillet and discard the rest.
  • Add the onion and bell peppers to the skillet and cook until cooked through
  • In a large bowl, mix together eggs, milk, cheese, hash brown potatoes, salt, pepper, and dill
  • Add crumbled bacon, onion, and peppers to the bowl and mix well
  • Pour egg mixture into the greased casserole dish and bake for 35 to 45 minutes until the toothpick comes out clean. If using the 8x8 inch casserole dish, bake covered for the first 30 mins
