Preheat oven to 350 degrees and prep a 9x5 inch loaf pan. My preference is to spread the butter around the pan, but you can also spray with non-stick spray or use foil.
Create Apple Mixture. Peel 2 large apples and chop into small squares. Don’t cut them too thin. Set aside in the fridge.
Create a Sugar mix. Add 1/3 cup brown sugar and 1 tsp of cinnamon in a small bowl. Whisk together and set aside.
In another small bowl whisk together 1 ½ cups all-purpose flour and baking powder. Set aside.
In a large mixing bowl, add ½ cup softened butter and 2/3 cup of sugar. If your butter isn’t softened, put in microwave for about 15-20 seconds. Make sure it doesn’t melt, we just want it soft to mix. Mix together with an electric mixer. Mix until smooth and creamy
In your butter and sugar mixture, mix in 1 egg at a time. Once both eggs are mixed in, add 1 ½ tsp vanilla extract and mix.
Take the flour and baking powder mixture and slowly add it to your cream mixture. Don’t add it in all at once or it will fly out of the bowl! It also makes it easier to mix if you add a little at a time.
Slowly add in ½ cup milk to your mixture. Again, add in slowly or it will splash everywhere. Mix until it is smooth and creamy! This is your bread batter 😊
Pull your apples from the fridge and toss with 2 tbs of granulated sugar and 1 tsp of cinnamon.
Now its time to layer our batter and apples in our loaf pan!
Take about half of our batter and pour into pan.
Take about half of apple mixture and add on top of the batter
Take about half on brown sugar and cinnamon mixture and pour on top of apples
Pour the rest of batter in panPour in the rest of the apple mixture Pour in the rest of the brown sugar and cinnamon mixture. Make sure to coat it evenly Once you have layered everything into your greased pan, press lightly on the top of the batter. Push apples into the batter to make it smoother on top. I used a spoon to press and smooth out.
Bake for 1 hour, or until a toothpick comes out clean!
For the icing, whisk together ½ cup of powdered sugar and 1-3 tbs of milk or cream. I used tbs milk to make a thin glaze. You will add this on top of fritter once it is done cooking. I cooled off my fritter and put it in the fridge for 15 minutes prior to adding the icing
