Ingredients

  • 1 lb sliced bacon, diced
  • 1 sweet onion, chopped
  • 4 cups frozen hash brown potatoes, thawed
  • 9 eggs, lightly beaten
  • 2 cups shredded Cheddar cheese
  • 1 ½ cups cottage cheese
  • 1 ¼ cups shredded Swiss cheese

Instructions

  • Preheat the oven to 350F. In a medium-sized skillet, cook the onion and bacon until the bacon is browned and fully cooked. Drain.
  • Grease a 9x13” casserole dish. Using a medium-sized bowl, mix eggs, cheddar cheese, Swiss cheese, cottage cheese, potatoes, and bacon-onion mixture.
  • Transfer mixture to the prepared casserole dish
  • Bake casserole for 45-50 mins until eggs are cooked through.
